Our Story

Victoria's passions are food & people.

From a converted milk truck to a thriving culinary enterprise spanning New Mexico and beyond, Victoria Bruneni has built a career defined by innovation, generosity, and an unwavering commitment to community. With hundreds of thousands of meals donated, Victoria’s donations have impacted many non-profit organizations including the Food Depot’s Souper Bowl, the Santa Fe Wine & Chile Fiesta, Santa Fe Public Schools, and many more.

Victoria Bruneni

Victoria Bruneni has made her mark in New Mexico through exceptional leadership and entrepreneurial vision. Though she grew up in Southern California and Texas, and lived in New York and Kansas, she found her home in Santa Fe nearly 20 years ago. 

Victoria's professional journey spans multiple areas of hospitality—from hotel sales and food & beverage management to general management. She has served on the boards of Rotary, the Rape Crisis Center, St. Elizabeth's Homeless Shelter, and the City of Santa Fe Occupancy Tax Advisory Board. Currently, she serves on PARC and chairs the Santa Fe Veterans Alliance.

 

In addition to her deep commitment to community, Victoria is a dedicated mother to her daughter, Elissa.

Food and people are Victoria's twin passions. Drawing on her experience in the hotel and wedding industries, she launched her own catering business serving the film industry, nonprofit organizations, and weddings. After purchasing a 60-year-old milk truck, What the Truck was born. Her reputation speaks for itself—Victoria's generous heart matches the scale of her business success. She is widely recognized throughout Santa Fe for her commitment to giving back.

Today, Victoria's catering company what THE truck has evolved into the Culinary Collection, a thriving business with over 40 employees. She oversees commercial kitchen operations at the State Capitol cafeteria, Bishop's Ridge Camp Stoney & Recreation Area, the Spanish living history museum El Rancho de Las Golondrinas, southern Colorado's Osier train station on the Cumbres-Toltec line, and Kings Pizzeria in the Palace Hotel. Her newest venture, Bruneni, represents her elevated catering division—a testament to her continued growth and vision.
